I cook and ferment (all organic) whole wheat, spelt, kamut, rye, einkorn, millet, and barley, and then add the grains to the dough by hand. A moist, hardy loaf with lots of flavor and texture. This week I think I’ll even innoculate it with some of the Lactobacillus brine from the “Red Baran” loaf! Zander’s request! (my 9yo son 🙂)
